Lemon cake with lemony chocolate sour cream frosting

I love lemons. I love lemon anything actually but most of all, lemon cake. Mmm.

So yesterday when we decided to go on a picnic, I decided that a lemon cake would be perfect for this lovely spring-y weather.

This is the cake I made:

Ingredients

5 tbsp butter + 5 tbsp vegetable oil

1 1/4 c sugar

2 c all purpose flour

1/2 tsp salt

1/2 tsp baking soda

4-5 tbsp fresh lemon juice plus zest of 2 lemons

1/2 cup milk

3 extra large eggs

Process

Preheat oven to 180 c.

Butter and flour your fave cake pan.

Sift together flour, salt, and baking soda.

In a glass, add the lemon juice to the milk.

Cream butter and sugar until pale and fluffy. Add in eggs, one by one and then the zest.

Alternately mix flour mixture and milk mixture into the butter-sugar-egg mix.

Pour batter into pan and bake until a cake tester comes out clean. This should take about 35-40 minutes.

Once the cake was all ready and the kitchen was smelling heavenly, I changed my mind about making the usual lemon-icing sugar glaze. Then I found a sour cream frosting recipe which I thought would be perfect. But once the frosting was ready, something wasn’t right and I couldn’t picture it with my awesome lemon cake. So I randomly threw in some melted chocolate squares and ta-da, the frosting became truly fabulous!

Here’s the recipe:

Ingredients

2-3 c powdered sugar
2 tbsp sour cream
1/4 teaspoon salt
2 tbsp lemon juice
Milk
4 squares chocolate, melted
Process
Mix sour cream and 2 cups of the icing sugar. Add lemon juice. Add melted chocolate and let cool completely before frosting your cake.
Dig in!
