Apple Crumble Cake

The first time I had a cake with apple in it was the apple coffee cake which a friend baked for me in the last month of my pregnancy with Hasan. I’m not a fan of anything with baked apples in it so I was a bit apprehensive but it was really good. I kept meaning to take the recipe from her, but just never remembered.

One year later, one morning I just woke wanting the same apple coffee cake and called my friend up only to find that she didn’t remember which recipe she’d used. So off I went to my trusty source, Google and found this recipe – I took it down on paper so I don’t remember where I got it off of!

I’ve baked this about three or four times now and as I type this, one’s in the oven* – and it’s always turned out fabulous. It tastes fabulous HOT, it tastes pretty darn good warm and tastes pretty delicious even cold. Try it with french vanilla ice cream or just on it’s own – eitherway, I say, try it! Because it’s also pretty easy to make, and quick!

Ingredients

2 medium sized apples

1/2 c sugar

1 1/2 cups flour

2 tsp baking powder

1/2 tsp salt

1/2 cup milk

1 egg

1/3 butter or vegetable oil

Process

Grease your pan and pre-heat your oven to 180 c.

Sift together the dry ingredients.

In a big, deep mixing bowl, beat butter and sugar together and then add the egg. Add the milk, and beat well. Mix in the dry ingredients.

Pour the batter in to the pan and cover with thinly sliced apples – concentric circles do best.

Make the crumble by mixing together 3/4 cup sugar, 1/4 cup flour, 2 tbsp butter and 1 tsp cinnamon. Using your hands drop this mix all over the apples and put your pan in the oven.

Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

* The one that is in the one just now has a minor adjustment – I added 1/4 cup of yogu
