Carrot-Almond-Honey Cake

This morning I woke wanting to eat dessert with carrots in it – call it a beta-carotene craving. I went online, and looked around for some cake and / pudding recipes. I found a couple and thought, hmm, why not combine a few and come up with my own? One that Hana pronounced ‘dishalicious’, so here goes the recipe before I forget it all.


1 cup blanched and slivered almonds

1 1/2 cups peeled and grated carrots

1 1/2 cups flour

1 tsp baking soda

1 1/2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

2 large eggs

3/4 cup honey

1/2 cup oil

1/4 cup milk

1 tsp vanilla essence


Sift together the dry ingredients and set aside.

Preheat your oven to 180 c.

In a deep bowl, beat the eggs, add the honey, milk, vanilla essence and oil until well incorporated. Add the dry ingredients and mix well. Fold in the carrots and almonds.

Pour into a pan, smeared with oil and bake for 25-30 minutes, until a toothpick inserted, comes out clean. Cool on a wire rack.

We had ours two ways – dusted with icing sugar and drizzled with honey. Truly dishalicious!
