Chocolate Yogurt Cake

Filed under: Random — by Mona S. @ 3:38 am

I wish I’d remembered to take pictures because this is the first time that I made this cake and I would never have guessed how awesome it is. Or how easy to make.

I took the recipe off here and modified it to accommodate what I had lying about in the kitchen.

6 tbsp oil (in place of butter)

1 cup whole-wheat flour and 3/4 cut all-purpose (the original calls for all-purpose only)

2/3 cup cocoa (I used Hershey’s drinking chocolate powder)

1 1/2 tsp baking powder

1/2 tsp baking soda

3/4 tsp salt

1/3 cup water

1 cup skimmed yogurt (the recipe calls for full-fat yogurt)

1 tsp vanilla

1 1/2 cups sugar

2 eggs

Preheat over to 180 C. Grease your baking pan (the recipe calls for a loaf pan, I used a normal circular one) with oil or baking spray and dust with cocoa powder, shaking out any excess.

Whisk together the yogurt, water and vanilla and set aside.

Mix the flours, salt, baking powder and soda, cocoa and set aside.

In your blender (or do it by hand like I did), beat sugar and butter and then add the eggs, one by one and beat until frothy. Add half the flour mixture and beat together. Add the yogurt and beat again. Add the rest of the flour mixture and beat again for about two minutes.

Pour into pan, and bake for 30-40 minutes.

Dig in. Fantastic with ice cream, or strawberries or just on its own too.
